This rollcake is one of my favorites. It was my first time using yogurt cream to frost the outside of one, too, and it was surprisingly easier than I thought it would be.
Saint-Sebastien
A two-tone chocolate butter cake with ganache frosting. It’s a lot easier to assemble than it looks!
Passion Fruit and Mango Cake
Two of my favorite fruits ever in one cake! Also got to work with “scooping techniques” for decorating. It’s usually used for ice cream but we used it for our creme patisserie.

A bit on the Christmas-y side, but this cake was both delicious and quite easy to make. It’s also highly versatile allowing for all kinds of possible combinations of flavors and decorations. The center is a white chocolate mousse with three raspberry flavored mini-roll cakes inside. The outer layer is a raspberry puree stiffened with some gelatin, decorated with more white chocolate and fruit.
