Today was a lot of fun. I made some wonderful choux a la crèmes (cream puffs) and éclairs. The filling in the éclairs is coffee flavored, giving them a “grown-up” taste”.
Today I made a French pastries called religieuses. They are a kind of choux pastry filled with crème, which are extremely popular in Japan. These particular pastries are decorated to look like “nuns”, which is where they get their name.
Today I introduced a friend to the cooking studio and we did a lesson together. We made small pastries shaped like “omelettes” with chocolate, matcha (powdered green tea), and chestnuts.
